Your Mini Bakers will adore these super playful ice cream cupcakes. We've used our Double Choc Cake Mix to fill the cones, giving you more time to think about decorating them. They're super easy to make and can be decorated in so many different ways, so get creative!

3 layer 8" vanilla or lemon cake
1300g buttercrean mix
500g rainbow sprinkles
200g dolly mixtures
15g jelly beans
10-15g mini marshmallows
5-10g silver star sprinkles
any other sweet you want

INGREDIENTS

double choc cake mix
530g unsalted butter, softend
3 medium free range eggs
2 tbsp milk

10 ice cream cones
280g icing sugar

1 tsp of strawberry flavouring
red food colouring gel
10 mini chocolate flakes
25g sprinkles

INGREDIENTS

double choc cake mix
530g unsalted butter, softend
3 medium free range eggs
2 tbsp milk

10 ice cream cones
280g icing sugar

1 tsp of strawberry flavouring
red food colouring gel
10 mini chocolate flakes
25g sprinkles

step by Step guide

STEP 1

Use our Double Choc Cake Mix and follow the instructions  on the packet to make the chocolate cake mix.

STEP 2

Fill a piping bag with the cake mix and snip the end. Pipe the cake mix into the ice cream cones. Alternatively you can use a spoon. Fill to 2/3 of the cone.

STEP 3

Place all your cones on a baking tray and bake for 30 mins at 180˚C/ 350˚F .

STEP 4

Make the buttercream by mixing 250g unsalted butter, 280g icing sugar together and strawberry flavouring. If stiff add a little milk.

STEP 5

Prepare a pipping bag with a large star pipping nozzle. Use red food colouring gel and a paintbrush to paint long lines of the colouring along the inside of your piping bag. Aim to space them out about half an inch between each one. Then fill the piping bag with buttercream.

STEP 6

When the cakes are completely cool. Swirl the buttercream on to the top of your cakes in a circular motion so it looks like a Mr Whippy ice cream!

STEP 7

Now it's time to decorate. Add a flake and sprinkles. You could even add sauce and sherbet!

STEP 8

Yay you’re all done! Share your yummy cupcakes with all your friends.

BKD Zesty Lemon cake mix

280g butter

3 eggs

1tbsp milk

blue food colouring

smarties (red, orange, yellow, green, blue)

mini white marshmallows

STEP 1

 Using the BKD Zesty Lemon Cake mix, bake 2 x 6" cakes, following the instructions on the packet.

When your cake is completely cool, trim them both with a bread knife until they are flat on top.
